The Dinner thread
So what are we all having for dinner tonight?
I felt a bit fancy but wanted to keep it light. I arranged canned tuna, diced tomatoes, and shredded carrots on whole romaine hearts and topped it with fresh made guacamole. Steamed some broccoli and served it all with good crusty sourdough bread.

It was definitely from the Chronicle, but I can’t find it on sfgate. Oh well. I’ll type it up real quick:
Ingredients:
- 3 tablespoons fish sauce
- 3 tablespoons lime juice
- 3 tablespoons water
- 3 teaspoons sugar
- 1 lb daikon radish
- 2 carrots
- 1 1/2 ahi tuna fillet
- salt and pepper
- 1 teaspoon vegetable oil
- 1 large sweet baguette
- 4 tablespoons mayonnaise
- 1/2 bunch cilantro, stems trimmed
- 1-2 fresh jalapenos, thinly sliced
Combine the fish sauce, lime juice, water, and sugar and stir until the sugar dissolves.
Peel the daikon and shred it in a food processor. Repeat the carrots. Place the daikon and carrots in separate bowls and divide the fish sauce mixture between them. Toss well and set aside.
Season the tuna on both sides with salt and pepper. Heat a large skillet with the oil. When very hot, add the tuna. Sear on one ide for 2 minutes, then flip and repeat on the other side. Remove from the pan.
Slice the baguette into 4 pieces and cut in half into a hot dog bun shape. Scoop out about a 1/2 inch layer of bread from both flaps. Spread both sides with mayonnaise.
Slice the tuna to fit the baguette, and place on top. Squeeze as much liquid as you can from the vegetables and place them atop the fish. Arrage the cilantro and chile slices over the vegetables.

I like to marinade my tuna steaks with a homemade teriyaki sauce (a little honey, soy sauce, some brown sugar, little lime juice) and then sear them up on a grill. Can’t go wrong with tuna steaks.

I’m making Thing – it’s a recipe my dad used to make when I was a kid. You take cubed potatoes, sautee them until golden-brown, and serve them with cottage cheese, scallions, and fresh-ground pepper on top.
I make it with sweet potatoes instead of potatoes, though.

I wanted to figure out a way to use some chipotle peppers in adobo sauce and chicken, but couldn’t seem to pull something together (any ideas, folks?). So it’ll be some frozen manicotti, veggies and garlic bread. And a big glass of wine in honor of the Zito start.
